Terpenes are widely found in essential oils and oleoresins. Terpenes are hydrocarbons constructed of isoprene units (C₅H₈)n, and their derivatives which are oxygen-containing compounds and unsaturated compounds. Depending on the number of isoprene units, terpenes may be called monoterpenes (n=2), sesquiterpenes (n=3) and diterpenes (n=4). Monoterpenes, such as geraniol, menthol and pinene, often have the fragrance. Phytoncide contains pinene as a major component, which is recent topics in the forest bathing. Traditionally, terpenes have been utilized as perfumes and pharmaceuticals. Additionally, many of terpenes often possess asymmetric carbon atoms in their molecules. Such terpenes can be chemically modified, and used as chiral auxiliaries and chiral ligands to synthesize optically active compounds, and also to measure the optical purity.
